Envision Strategies partnered with an architectural team to conduct a comprehensive dining expansion and renovation study for the University of Wisconsin–Madison, focused on understanding future demand and determining the most viable operating models for an expanded Grainger Hall food program. The work included a detailed assessment of current dining activity, population patterns, and capacity constraints across multiple campus venues, along with scenario forecasting to understand how enrollment growth, housing expansion, and increased traffic around Grainger Hall would influence future needs. Envision evaluated several alternative operating models, ranging from fully university‑operated concepts to branded and hybrid approaches, and analyzed each for projected demand, financial performance, operational feasibility, flexibility, and alignment with university goals for student experience and brand identity. Findings indicated strong potential for expanded food offerings at Grainger Hall, with models incorporating branded or mixed concepts showing higher capture rates and improved financial sustainability, while still supporting variety, convenience, and a high‑quality student environment. The study provided the University with data‑driven market demand estimates, comparative financial projections, and strategic guidance to inform decisions on concept mix, facility sizing, and the overall direction for the Grainger Hall expansion and renovation.Â
