Illinois State University serves 21,000 students in Bloomington-Normal, Illinois, with a dining program that spans residential, retail, and catering operations. A few years ago, a servery redesign gave Bill Legett‘s team the opportunity to rethink how they were serving students with food allergies — and what started as a targeted solution became one of the most popular destinations in the dining program.
Bill joins Sojo Alex to share the story behind Station 9, Illinois State’s top-nine allergen-free dining venue, how student and parent feedback shaped its development, and why the concept has resonated far beyond the students it was originally designed to serve.
Bill’s takeaway = An allergen-free dining station built around student safety turned into a recruitment tool, a retention asset, and a destination for students with no dietary restrictions at all. Meeting a specific need well often creates broader appeal than anyone anticipates.
