Dining Master Plan

Appalachian State University’s Auxiliary Services retained Envision Strategies to assess the current campus dining program and partner with Food Services to develop a master plan that would align all aspects of dining with planned campus changes including new housing. At the time, Appalachian State had all retail locations with declining balance meal plans. Based on the analysis and findings, Envision Strategies recommended the conversion of two of the major dining spaces into all-you-care-to-eat (AYCTE) dining. This led to the restructure of the mix, distribution, and possible consolidation of other dining locations. A change in the meal plan structure was also one of the major modifications to consider as part of the introduction to AYCE dining where they introduced ‘lifestyle’ meal plans which emphasize community dining and offers increasing flexibility for upper class residents.

This project was selected as the 2022 FCSI Project Showcase.
