Dining Master Plan

Appalachian State University’s Auxiliary Services engaged Envision Strategies to conduct a comprehensive assessment of the campus dining program and collaborate with Food Services on the development of a long-term master plan. The goal was to align dining operations with anticipated campus growth and planned capital projects, including new student housing. At the time of the study, all dining venues operated as retail concepts supported by declining balance meal plans. Following a detailed analysis, Envision Strategies recommended converting two major dining facilities to all-you-care-to-eat (AYCTE) formats. This strategic shift prompted a broader evaluation of the dining portfolio, including adjustments to the overall mix, redistribution of concepts, and potential consolidation of select locations. A key component of the transformation was the redesign of the meal plan structure. With the introduction of AYCTE dining, the University implemented new “lifestyle” meal plans designed to foster community dining while providing increased flexibility, particularly for upper-class residents.

This project was selected as the 2022 FCSI Project Showcase.
