Fairfield University was generally satisfied with its dining program throughout the first year of a new contract: students were satisfied with the quality and variety, and the management team was responsive to University needs. However, operating costs escalated significantly beyond budget projections, causing University administrators to question whether the program was being operated in a financially responsible manner. In response to these concerns, the supplier proposed a new set of meal plans. The University sought the assistance from an independent consultant to review the current program and meal plan structure, assess the contract and other relevant data, and evaluate the recent financial performance relative to the current structure and program offerings. In addition, the campus experienced strong growth in enrollment, raising additional concerns about the ability of the dining operations and facilities to meet increased demand. The University further sought the consultant’s review of projected demand needs and advice on the most effective means to meet these needs while providing the level of dining experience expected.
