To prepare for the development of a new medical center, Envision Strategies worked with Intermountain Health Care (IHC) on a comprehensive facilities and operations master plan for their entire Urban Central region. Key objectives of this study included:
Assessment of the current operations of its three independent hospitals to identify opportunities to improve services and efficiency;
Identification of potential benefits and risks of integrating the food service operations of the three hospitals and the new medical center;
Analysis of alternative delivery systems, including centralized cook-chill production and its implications for patient, retail and catering services;
Development of a Regional Vision Statement for the IHC Food Service departments.
The Master Plan presented five delivery alternatives from fully centralized to fully decentralized production. After thorough analysis and review, IHC elected to centralize both cold and cook-chill production in a single commissary, with each hospital and the new medical center maintaining on-site finishing kitchens and tray assembly. To support this decision, Envision Strategies provided detailed space programs and cost estimates for the new commissary and medical center foodservice as well as for required retrofits to the existing hospital kitchens.
